2016 Sparkling Shiraz

2016 Sparkling Shiraz

Technical details

Variety: – 100% Shiraz              Canberra Region         Harvest: – 16 March 2016

Wine Analysis: – 13.9% Alc      pH 3.55    Total Acid = 6.35g/l

Produced by ‘Methoide Traditional’. The Shiraz grapes were picked at optimal maturity with the fruit showing rich Plum and Dark fruit flavours. The initial fermentation was on skins for 10 days before pressing. After finishing malo-lactic fermentation, the wine was then further aged in 2 and 3 year old French oak barrels to allow slow maturation without too much oak flavour. This wine was ‘Tirage’ bottled in August of 2017 for bottle fermentation and left ageing on lees for a further 12 months to enhance aroma, flavour and mouth-feel. Riddled and disgorged with balanced liquor addition to retain natural fruit flavours.
