Technical details
Variety: – 100% Shiraz Canberra Region Harvest: – 15 March 2014
Wine Analysis: – 13.3% Alc pH 3.62 Total Acid = 6.4g/l

Production: – Crushed and fermented on skins for over 3 weeks, to ensure full soft flavour and body feel, the wine was racked to small oak for ageing for a further 16 months. “Tiraged” in July 2015 for bottle fermentation and left to age and further develop until disgorging in August 2016.

Tasting Notes
Appearance: – Dark Ruby red with fine and persistent bead of bubble.

Nose: – Rich plum and black cherry fruit aromas with a hint of liquorice.

Palate: – Dark fruit flavours dominate a rich and full flavoured palate. The finish is rich, clean and long with good fruit sweetness and balance. This wine is fruit driven with good development, richness and balance.

Food: – Serve with ‘game’ meats, Dark Chocolate Mud Cake or Christmas pudding.
