2010 Blanc de Blanc
Variety: – 100% Chardonnay Canberra Region . Harvest: – 28 Feb 2010 Wine Analysis: – 12.9% Alc pH 3.15 Total Acid = 7.50g/l
Hand-picked and whole bunch pressed before cold settling to clarify the juice. Temperature controlled fermentation over four weeks and left to develop on lees, with twice weekly stirring for 17 weeks. ‘Tirage’ bottled in July 2010 for bottle fermentation and left ageing on lees for a further 5 years to enhance aroma, flavour and mouth-feel. Riddled and disgorged in September 2015 with minimal liquor addition to retain natural fruit flavours and bottle development characteristics.
Appearance: – Pale lemon straw with fine and persistent bead of bubble.
Nose: – A light ‘Bread’ yeast character, with honeydew and citrus fruit aromas.
Palate: – Fruit dominant and full flavoured, the palate is clean and fresh with good melon fruit sweetness and balanced with a clean and crisp finish. This is a fruit driven style enhanced with the developed creamy rich texture from 5 years on lees. The wine is full, soft and delicate in a great example of the style.
Food: – Serve with seafood, stone fruits and most white meat dishes.
